Let’s talk about coffee…Every cup of coffee is a reflection of where its beans come from. Even two coffees prepared in an identical way can delight with a completely different flavor profile. The secret to this diversity lies in terroir – a French-derived concept that describes the unique environmental conditions in which coffee berries ripen.

The terroir is composed of many interacting factors: crop height above sea level, climate, temperature amplitude, rainfall amount, soil type and mineral composition, plantation exposure to the sun, and local agronomic practices. It is their synergy that shapes the sensory potential of the beans, giving coffee a unique aroma, structure and depth of flavor.

Every region of the world leaves its own character in the coffee…

Jamaica Blue Mountain is one of the most prestigious coffees in the world. The unique microclimate of the Blue Mountains, frequent fogs and slow ripening of fruit translate into an extremely clean, elegant taste, subtle sweetness, delicate acidity and a velvety body.

It is the terroir that makes coffee more than a drink – it is an expression of its place of origin. As with the best wines, each plantation, each region and each crop height leaves its own unique character in the grains.

However, the potential dormant in grains only becomes apparent after harvest. An equally important element is the processing process (processing), which determines the final sensory profile of the coffee.

The method of separating the grains from the fruit pulp – washed (washed), natural (natural), honey or the increasingly popular anaerobic fermentation processes (anaerobic) – influences the level of sweetness, the intensity of aromas, the structure of the infusion and the nature of acidity. A properly selected treatment method can highlight the natural features resulting from terroir or give coffee a completely new sensory dimension.
